Gaba Ryokucha is a green Japanese tea from the beautiful Setoya Valley. This tea was processed using a method in which the leaves are allowed to wilt without oxygen, which is replaced with nitrogen. This process dramatically increases the GABA content in the tea leaves. The designation "ryokucha" is used because, unlike sencha, this tea did not undergo shaping.
Whether the result is due to the beautiful nature of Setoya or Tamiko's masterful work in shiage, I have finally found a GABA worth drinking.
