Zairai sencha from Mr. Katagi's naturally managed plantation. Shigaraki no Mine is a basic lightly steamed (asamushi) sencha from the wide repertoire of teas that Katanagi-san cultivates and also processes himself.
Being zairai - tea bushes from seeds - the resulting taste is far from as polished as that of cultivar teas, but it is this wildness that gives this tea its vitality and invigorating qualities. The part of the garden from which the leaves for Sencha Shigaraki no Mine come is planted with tea bushes over fifty years old.
Like all of Mr. Katagi's asamushi teas, Shigaraki no Mine is suitable for aging.
