CHUMUSHI 中蒸し
Chumushi or Futsumushi (普通蒸し茶) is a steaming method lying between asamushi and fukamushi. Until a few years ago, chumushi was a non-existent category - any tea steamed longer than asamushi was classified as deep fukamushi steaming. However, as deep steaming has grown in popularity, tea producers start to experiment with very long steaming times and the difference in taste between a 60 and 120 second steaming tea is significant. And so chumushi steaming was invented as "normal steaming"
